Ingredients (Part 1) Chicken: 500g, bone-in Rice: 2 cups basmati Onions: 2 sliced Tomato: 1 chopped Curd: ½ cup Oil + Ghee: 3 tbsp

Wash and soak basmati rice for 20 minutes. Boil until 70% cooked. Drain and keep aside. This prevents mushy biryani.

Heat oil + ghee. Add whole spices → sauté onions until golden. Add ginger garlic paste, tomatoes, curd, and spices. Cook until oil separates.

Add chicken pieces. Cook for 8–10 minutes until they turn soft and absorb the masala. Stir occasionally to avoid sticking.

In a pan: Layer 1: Chicken masala Layer 2: Half-cooked rice Top with fried onions, coriander, mint & 1 tsp ghee.

Cover tightly. Cook on low flame for 15 minutes. Let it rest 5 minutes before opening. This step gives aroma & flavour.
